Steel Cut Oatmeal with Walnuts, Apricots and Apples
1 C. Irish Steel Cut Oats, Uncooked
½ C. Raw Walnuts, Chopped
½ C. Apricots, Chopped
2 Granny Smith Green Apples (or any apples you prefer), Peeled and Chopped
1 C. Unsweetened, Vanilla Almond Milk
½ tsp. Organic Cinnamon, Ground
1 tsp. Organic Vanilla (pure)
Agave Nectar (optional)
In a medium saucepan add 4 cups water and bring to a boil. Add the uncooked oats and cook according to package. Approximately 30 minutes.
During the last 15 minutes of the oats cooking add the cinammon, vanilla and apple.
Cook, stirring constantly, until oats are cooked and mixture has thickened. Cover.
Once ready to serve, scoop the oats into small serving bowls, top each bowl with the apricots, blueberries and walnuts. Pour warm almond milk onto each. Drizzle with agave nectar (optional).
